Dairy Free Cleanish Apple Crisp

I created this dairy-free cleanish apple crisp to use up some apples that I had leftover from apple picking with my daughter. Although apples are not low carb, I wanted to create a special dessert that we could eat together without going too far over my carb limit. If you would like to make it even lower in carbs just substitute the apple for zuchini or chayote squash. Enjoy this warm with some sugar free whipped cream or ice cream for a delicious autumn treat!

Nutritional values are not available for this recipe, as values differ depending on the type of apple and nuts you choose to use. Personally, because I ate this as an occasional treat I did not calculate the nutritional values. Instead of worrying about the macros I limited my portion size to approximately the size of an apple so that I would not go too far over my daily carbs.

Filling
 5 cups Chopped Apples (use zuchini for a lower carb version)
 ¼ cup Water
 1 tbsp Lemon Juice
 ½ cup Sukrin Gold (any type of sweetener will work here, adjust amount to suit your taste)
 1 tsp Cinnamon
 1 dash Nutmeg
 1 dash Pumpkin Spice Blend (optional)
 12 tbsp Chia Seeds
Topping
 ¾ cup Almond Flour
 ¾ cup Chopped Walnuts or Pecans (substitute quick oats to make nut free)
 1 pinch Salt
 2 tbsp Sukrin Gold (any type of granulated sweetener will work here, adjust amount to suit your taste)
 Cinnamon
 1 dash Nutmeg
 1 cup Butter Flavoured Coconut Oil (traditionally butter is used, any type of fat that solidifies at room temperature will work here)
For the Filling:

Cut apples into bite sized chunks and place in a stove and oven safe baking dish such as a Rock Crock.

If you only have an oven safe dish you can skip putting the filling on the stove to cook and just bake the entire dish in the oven for a bit longer a the end.

Place apples on stove to cook slightly on medium heat. While apples are cooking stir in the remaining filling ingredients.

Remove from heat once the apples are slightly cooked, but still firm.

The apples will finish cooking in the oven once the topping is added.

For the Topping:

Combine all topping ingredients, except the oil. Stir to combine.

Add the oil and mix together with hands until it is well incorporated and a chunky crumb is formed.

Sprinkle topping onto apple filling. Poke your finger all over the top to create lots of edges to brown.

Place uncovered in a preheated 350 degree oven for approximately 30 minutes.

Broil for a few minutes before taking out of the oven to crisp up the topping.

Serve warm with sugar free whipped cream or ice cream for dessert.

Leftovers are delicious the next day hot/cold for breakfast!
